🍚 Recipe: Saffron Risotto (Risotto alla Milanese)

  • Large pinch Saffron Threads (steeped in 2 tbsp warm water)
  • 1.5 cups arborio rice + 1L hot stock
  • 1 onion + butter + parmesan + white wine

Method: Steep saffron in warm water 10 mins. Sauté onion in butter. Add rice, toast 2 mins. Add wine. Gradually add stock + saffron water, stirring constantly 20 mins. Finish with butter + parmesan. Pure gold. 👑
