🍲 Recipe: Apricot & Almond Energy Balls
- 1 cup dried apricots
- 1/2 cup Organic Almonds
- 2 tbsp Coconut Sugar
- 1 tbsp coconut oil + pinch of Cinnamon
Method: Blitz everything in a food processor. Roll into balls. Refrigerate 30 mins. Makes ~15. Perfect lunchbox snack!
🥗 Recipe: Moroccan Chicken Tagine with Apricots
- 500g chicken thighs
- 1/2 cup dried apricots, halved
- 1 tbsp Moroccan Seasoning
- 1 onion, 400g tinned tomatoes, chicken stock
Method: Brown chicken. Add onion + Moroccan seasoning. Add tomatoes, stock, and apricots. Simmer 40 mins. Serve over couscous. Sweet, spicy perfection.
